With the original version I get a fairly thin soup. This could of course be due to the zucchini and its size. The next time I added a large potato, a dollop of crème fraiche and smoked salmon shavings on top. Delicious!! I also received many compliments when I made it for 16 people.

Delicious recipe! But good fats, healthy butter and cream do not make the soup unhealthier. On the contrary, fats are essential for properly absorbing nutrients and they keep you feeling full for longer. :)

Odd question? I put 1 zucchini with 500 ml cold/lukewarm water in a (plastic) blender and repeat this. Afterwards I put it on with 1 vegetable stock cube until it boils and the food is ready, so to speak. My question is whether this is healthy(er) or not, because the zucchini have not been cooked or fried in advance, which can be beneficial in terms of retaining nutrients? I read somewhere that raw zucchini that tastes bitter is not healthy and you can no longer taste that from the above. It is the first time that I have a plastic blender (= lighter and cheaper), in which I prefer not to put hot water to possibly prevent or minimize plastics in the soup. And 1 cube tastes fine to me, the less (salt) the better?
